American Oak Fans & Staves

The A.P. John ‘fan’ packs and mini staves can be used during alcoholic and malolactic fermentations as well as for maturation applications.

The surface-to-volume ratio provides optimum control over the transfer of oak flavours and characteristics.

Our packs have been designed for easy installation across small, medium and large tanks (from 1000L upward).

Applications of between one-to-three square metres per 1000 litres of wine delivers the required integration sought by winemakers.

Toast options include:

  • Convection toast (medium or medium plus options) delivers lifted, rich, sweet-toasted flavours and offers mid palate depth and weight. Best for wines that looking for extra structure and body.
  • Traditional (fire toast) delivers more subtle aromatics than convection toast. Vanilla and sweet spice, with dark chocolate and a complex toast character. The fine-oak tannins are firm, linear and structural. Best suited to wines that already have good fruit weight but require structure and complexity.
