Shavings are taken from three-year seasoned barrel-grade oak. This product delivers a high-quality and cost-effective oak solution for fermentation and maturation.
Adding oak at fermentation boosts micro oxygenation in the early stages of vinification, this helps the yeast function, stabilises colour and also begins to create texture and mouthfeel, providing real tannin integration.
Application rates can be adjusted to suit individual winemaking requirements, however experience with A.P. John Oak Shavings suggests that rates of between one-to-five grams per litre (applied at the crusher) deliver the desired results.

Shavings are taken from three-year seasoned barrel-grade oak. Oak is seasoned at mill for 36 months prior to shipment to our cooperage – Barossa Valley, South Australia.
A.P. John Oak Shavings are available as both toasted and untoasted products. Toasting softens the tannin, which helps to liberate sweeter flavours and smoother mouthfeel.
Shavings are available in Bulk Bags (300kg plus) as well as 10kg Poly Bags.
