    French Oak Fine Grain Fan

The A.P. John Coopers French Oak Fine Grain Fans are available in two toast options, providing different flavour profiles.

The Fine Grain Medium Toast bolsters the mid palate and provides richness. The Fine Grain Traditional Toast adds complexity to wines with premium fruit characters.

Performance

To be used during alcoholic & malolactic fermentations as well as maturation applications. ‘Fans’ offer a surface to volume ratio to provide the winemaker with optimum control over the regulation of the transference of oak flavours and characteristics.

  • Easy installation method for small, medium sized and large size tanks.
  • Surface area/ weight ratio provides for moderate uptake of oak flavours.
  • Single use for medium to long term extraction time – six-to-12 months at low rates.
  • Multiple use for short term extraction times – one-to-three months at higher rates.
  • Dosage rate: One-to-three square metres per 1000 litres
*Note – The rate is a recommendation only.  Individual trials according to grape varieties/ cultivars are recommended.

Toasting

Convection Oven Toast (Medium)
Lifted sweet icing sugar and subtle vanilla with underlying spice and cedar aromatics. Showing round and soft palate development with vanilla and green sage spice flavours. Best for wines that need a sweet French Oak lift, full of complex flavours.

Traditional Fire Toast
More refined aromatics than the Convection Toast. Sweet cedar, spice and hedgerow bramble aromatics lightens the fruit spectrum. The fine oak tannins are firmer, more linear and structural. Best suited to wines that already have good fruit sweetness but require structure and complexity.

Growing Region

This Quercus Petraea Oak is selected from the Allier and central French forests.

Average rainfall:               970mm pa
Elevation average:           370m

Seasoning

This oak has been sized to its final dimensions and then seasoned at the French mill site for two winters, where it is exposed to an annual precipitation of 950mm prior to shipment. When it arrives at our cooperage – in the Barossa Valley, South Australia – the oak spends another four-to-six months in our seasoning yard to acclimatise the oak prior to manufacturing.
